Ingredients

🟤 Base

  • 2 lbs yuca (cassava), peeled & cut into chunks

  • 1 tsp salt

  • 2 Tbsp olive oil or bacon fat

  • 3 cloves garlic, minced

  • ¼ cup milk or coconut milk (for a creamy twist)

  • 2 Tbsp butter

  • ½ tsp adobo seasoning

  • ¼ tsp smoked paprika

  • ¼ tsp black pepper

🥬 Collard Greens Layer

  • 1 bunch collard greens, stems removed & chopped

  • 2 Tbsp olive oil or rendered bacon fat

  • 2 cloves garlic, minced

  • ¼ cup diced onion

  • ½ cup chicken or vegetable broth

  • 1 tsp apple cider vinegar

  • ¼ tsp cayenne (optional)

  • Salt & pepper to taste

🍋 For Serving

  • Drizzle of citrus garlic butter or sofrito oil

  • Crispy pork crumbles or smoked turkey bits (optional)

  • Lime wedge for brightness

Directions

1️⃣ Boil the Yuca

  1. Place yuca chunks in salted water; boil 20–25 min until tender.

  2. Remove fibrous core strands. Drain well.

2️⃣ Mash Base

  1. In a pan, heat olive oil or bacon fat; sauté garlic until golden.

  2. Add yuca, butter, milk, and seasonings.

  3. Mash with a masher or fork until chunky-smooth. (Think rustic mashed potatoes.)

3️⃣ Cook the Greens

  1. In another skillet, heat oil; add onion and garlic until translucent.

  2. Add collards and broth. Cover and steam 10 min.

  3. Stir in vinegar, cayenne, salt & pepper. Cook until liquid reduces.

4️⃣ Combine & Finish

  1. Fold half the collards into the mashed yuca for color and flavor.

  2. Spoon onto a platter and top with remaining greens.

  3. Drizzle with sofrito oil or garlic butter, then sprinkle crispy bits if using.

  4. Serve hot with a squeeze of lime.
