¼ cup milk or coconut milk (for a creamy twist)
2 Tbsp butter
½ tsp adobo seasoning
¼ tsp smoked paprika
¼ tsp black pepper
🥬 Collard Greens Layer
1 bunch collard greens, stems removed & chopped
2 Tbsp olive oil or rendered bacon fat
2 cloves garlic, minced
¼ cup diced onion
½ cup chicken or vegetable broth
1 tsp apple cider vinegar
¼ tsp cayenne (optional)
Salt & pepper to taste
🍋 For Serving
Drizzle of citrus garlic butter or sofrito oil
Crispy pork crumbles or smoked turkey bits (optional)
Lime wedge for brightness
Directions
1️⃣ Boil the Yuca
Place yuca chunks in salted water; boil 20–25 min until tender.
Remove fibrous core strands. Drain well.
2️⃣ Mash Base
In a pan, heat olive oil or bacon fat; sauté garlic until golden.
Add yuca, butter, milk, and seasonings.
Mash with a masher or fork until chunky-smooth. (Think rustic mashed potatoes.)
3️⃣ Cook the Greens
In another skillet, heat oil; add onion and garlic until translucent.
Add collards and broth. Cover and steam 10 min.
Stir in vinegar, cayenne, salt & pepper. Cook until liquid reduces.
4️⃣ Combine & Finish
Fold half the collards into the mashed yuca for color and flavor.
Spoon onto a platter and top with remaining greens.
Drizzle with sofrito oil or garlic butter, then sprinkle crispy bits if using.
Serve hot with a squeeze of lime.
